Recipe: Cashew Cream Recipe with Sour Cream Variation

This cashew cream recipe is an excellent vegan sauce, and it can be used in many ways. The sour cream variation is also delightful and can be used as a healthy vegan choice to top burritos, tacos, and much much more.

This cashew cream recipe is so great it comes in two ways, the sweet style and the soured version.  It has countless uses in the kitchen, but the best thing is, its vegan and great for you.  Cashews are not only tasty but a perfect choice for filling the all important healthy fat portion of your day.  Some other health benefits of cashew cream are:

  • Almost one gram of protein per tablespoon
  • High in magnesium 
  • Cholesterol free
  • Cashews are also a good source of both copper, and fiber

There are so many ways to use cashew cream by adding just a few things here are just a few:

  • As a dip, by adding some fresh herbs and capers
  • Blend in some edamame or chickpeas for a super hummus
  • Salad dressing by adding in some vinegar and fresh herbs
  • Icing

  • 1 cup raw cashews
  • 1/4 cup rice or soy milk
  • 1/2 tsp vanilla extract
  • 2 tsp maple syrup
  • Dash of cinnamon and nutmeg


  • 1 cup raw cashews
  • Juice of 1/2 lemon
  • 1-2 tsp apple cider vinegar
  • A pinch of sea salt
  • 1/2 cup unsweetened nondairy milk or water


  1. Soak cashews in water for 2 hours.
  2. Drain and add to a blender or food processor with all other ingredients.
  3. Blend until well combined.
  4. Taste and adjust as necessary.
