This tomato sauce recipe is a quick and easy type vegan sauce that is simply great over your favorite pasta.  Not only is this tasty and packed with essential vitamins and minerals.  This recipe also uses some of the ingredients that might by laying around your refrigerator, or may otherwise be thrown away.

Beet greens are often discarded when most people buy beets.  You can save your beet greens in the refrigerator for about 2-3 days.  After you make your roasted beet salad with dandelion greens and fresh grape tomatoes, you can turn around and have this as an entirely different wonderful meal.

Beet greens have a tremendous amount of nutritional value.  They are loaded with vegetable protein, as well as a great source of fiber.  They are packed with antioxidants, and high in vitamin B6, magnesium, and potassium.  

They have also found that beet greens can:

  • Contain blood clotting properties
  • Prevent osteoporosis

  • 1 tablespoon avocado oil
  • 1 tsp fresh grated garlic
  • 1 onion diced
  • 1 tsp Italian seasoning
  • 2 pints grape tomatoes
  • 2 cups chopped beet greens
  • 1 cup dry red wine, vegetable stock, or water
  • salt and pepper to taste


  1. preheat sauce pan and add oil
  2. add garlic and saute until golden brown
  3. add seasoning, onions and tomatoes
  4. saute mixture until the onions are translucent and tomatoes begin to “blister” or pop open
  5. stir in red wine, or your liquid of choice
  6. bring to simmer and stir in beet greens
  7. bring back to simmer and simmer for 5 minutes
  8. season with salt and pepper to taste
  9. serve with whole grain pasta
